Instructions
Begin by preheating your oven to 325°F (160°C). While the oven warms up, line a baking sheet with parchment paper.
In a large mixing bowl, add the softened butter and granulated sugar. Cream them together on medium speed for about 3-4 minutes until light and fluffy.
Incorporate the vanilla extract into the butter-sugar mixture, mixing until fully combined.
In a separate bowl, sift together the all-purpose flour, cornstarch, and salt. Gradually add the dry mixture into the wet mixture, combining until just blended.
If using, gently fold in the mini chocolate chips or chopped nuts.
Scoop out portions of dough and roll them into smooth balls. Arrange them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each dough ball into a round disk with the back of a fork or your palm.
Place the cookies into the preheated oven and bake for 15-18 minutes, or until the edges are light golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
To add a touch of elegance, arrange the cooled cookies on a beautiful decorative plate. For a festive flair, dust the tops with powdered sugar.
