Instructions
Begin by preheating your oven to 400°F (200°C).
Lightly flour your work surface and roll out the thawed puff pastry sheet to smoothen it and make it slightly larger.
Cut the pastry into 3x3 inch squares, yielding approximately 9 squares.
In the center of each pastry square, place a small square of Brie cheese.
On top of the Brie, layer 2-3 slices of the thinly sliced apple. Drizzle with honey and sprinkle the fresh rosemary over the layers. Don’t forget to season with a pinch of salt and pepper to enhance the flavors.
Gently fold the corners of each pastry square towards the center, pinching them together to enclose the filling and create a little bundle.
Arrange the assembled pastry bites on a baking sheet that you’ve lined with parchment paper for easy cleanup.
For a beautiful golden finish, brush the tops of the pastry bundles with the beaten egg using a pastry brush.
(Optional) Enhance the texture by sprinkling chopped walnuts or pecans on top of each bite.
Bake the pastry bites in your preheated oven for 15-20 minutes, or until they are puffed up and golden brown, with a flaky texture.
Once they are ready, let the bites cool for a couple of minutes on the baking sheet before serving.

Serve on a decorative platter with additional rosemary or apple slices for garnish.
