1boxbrownie mix (plus the specified ingredients on the box: typically eggs, oil, and water)
1cupcherry pie filling
1cupwhipped cream cheese (at room temperature)
1teaspoonvanilla extract
0.5cuppowdered sugar
0.5cupdark chocolate chips
0.25cupchopped pecans or walnuts (optional)
to tastefresh cherries and mint leaves for garnish
Instructions
Preheat your oven according to the instructions provided on the brownie mix package. Prepare your baking dish by either greasing it or lining it with parchment paper.
In a large mixing bowl, combine the brownie mix with the specified additional ingredients (usually eggs, oil, and water). Mix gently until just combined.
Pour the brownie batter into the prepared baking dish, spreading it evenly. Bake following the package instructions, or until a toothpick inserted into the center comes out with moist crumbs. Allow the brownies to cool completely in the pan on a wire rack.
In another bowl, combine the whipped cream cheese, vanilla extract, and powdered sugar. Mix until smooth and creamy.
Once the brownies have cooled completely, crumble them into small pieces in a large bowl.
Gently fold the cherry pie filling into the crumbled brownies, ensuring the cherries remain intact.
Take small portions of the brownie mixture and roll them into balls, approximately 1-inch in diameter.
Place the brownie balls on a lined tray and transfer the tray to the freezer for about 30 minutes.
While the brownie balls are chilling, melt the dark chocolate chips in a microwave-safe bowl or using a double boiler until smooth.
Remove the brownie balls from the freezer and dip each ball into the melted chocolate, allowing excess chocolate to drip off.
If desired, sprinkle chopped pecans or walnuts over the chocolate-covered brownie balls while the chocolate is still wet.
Place the tray in the refrigerator and chill until the chocolate has hardened, about 15-20 minutes.
Once the chocolate is set, serve the brownie bombs chilled, topped with a dollop of whipped cream and garnished with a fresh cherry or mint leaves.
Notes
For best results, ensure the brownies are completely cooled before crumbling.
