Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the cubed chicken, ensuring not to overcrowd the pot. Cook the chicken for about 5-7 minutes, stirring occasionally, until it is nicely browned on all sides. Once cooked, remove the chicken from the pot and set it aside on a plate.
In the same pot, add the finely chopped onion, minced garlic, and diced green bell pepper. Sauté the mixture for 3-4 minutes, stirring frequently, until the vegetables are softened and the onions are translucent.
Next, incorporate the rinsed and drained cannellini beans, diced green chilies, chicken broth, Cajun seasoning, ground cumin, dried oregano, and a pinch of salt and pepper. Stir the ingredients together until they are well combined and become a flavorful base.
Return the browned chicken to the pot, mixing it into the chili. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes. This allows the flavors to meld beautifully.
After 20 minutes, stir in the corn kernels and squeeze in the lime juice. Allow it to cook for an additional 5 minutes until the corn is heated through and the chili is aromatic.
Take a moment to taste the chili and adjust the seasoning with more salt, pepper, or Cajun seasoning if desired to match your flavor preferences.
