In a medium-sized mixing bowl, combine the melted coconut oil, honey (or maple syrup), almond milk, vanilla extract, and sea salt. Whisk the ingredients together until the mixture is smooth and homogenous.
Gradually sift in the cocoa powder, stirring continuously with a spatula or whisk to prevent lumps from forming. Continue mixing until you have a thick, creamy chocolate mixture.
Gently fold in the chopped mixed nuts, chopped dried fruit (if using), and dark chocolate chips to enhance the texture and flavor. Ensure the add-ins are evenly distributed throughout the mixture.
Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later. Pour the chocolate mixture into the prepared dish, using a spatula to spread it out evenly and ensure it reaches the corners.
Carefully tap the baking dish on your counter to release any air bubbles, and smooth out the top to create an even surface.
Place the dish in the refrigerator and allow the mixture to chill for at least 1-2 hours or until it is firm and set.
Once completely set, lift the chocolate slab out of the dish using the overhanging parchment paper. Cut into squares or rectangles, depending on your desired serving size.
Store the Choco Delight Bars in an airtight container in the refrigerator for up to two weeks to maintain freshness.
