1 cup jasmine rice

1 can (13.5 oz) coconut milk

1 cup water

1 tablespoon lime zest

2 tablespoons fresh lime juice

1 teaspoon sugar (optional)

½ teaspoon salt

Fresh cilantro, chopped (for garnish)

Begin by thoroughly rinsing the jasmine rice under cold running water. Continue rinsing until the water appears clear, which removes excess starch and results in fluffier rice after cooking.

    In a medium saucepan, combine the rinsed jasmine rice with the coconut milk, water, salt, and sugar (if using). Gently stir the mixture to ensure that all the ingredients are well incorporated.

      Set the saucepan over medium-high heat and bring the mixture to a rolling boil.

        Once it reaches a boil, lower the heat to the lowest setting and cover the saucepan with a tight-fitting lid. Allow it to simmer gently for about 15 minutes, or until all of the liquid has been absorbed and the rice is tender.

          After cooking, remove the saucepan from heat but leave it covered for an additional 10 minutes. This resting period allows the rice to steam and enhances its texture.

            Once rested, fluff the rice gently with a fork to separate the grains. Carefully fold in the lime zest and fresh lime juice, mixing softly to combine the flavors evenly.

              Taste the rice and adjust the seasoning if necessary, adding more salt or a splash of lime juice to suit your personal preference.
