2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (use fresh, frozen, or canned)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt, or to taste

½ teaspoon black pepper, or to taste

1 cup chicken broth

1 tablespoon fresh lime juice

Fresh cilantro leaves, for garnish

Sliced avocados, for serving

Instructions
 

Begin by placing the boneless, skinless chicken breasts at the bottom of your crockpot. This will serve as the base for your dish.

    In a separate mixing bowl, combine the drained and rinsed black beans, the can of diced tomatoes (including the juice), the corn kernels, diced onion, and minced garlic.

      Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly coated with the spices.

        Carefully pour this flavorful mixture over the chicken in the crockpot, ensuring the chicken is well-covered.

          Pour the chicken broth and fresh lime juice over the top of the mixture to enhance the flavors and keep the chicken moist during cooking.
