8 ounces of penne pasta

1 medium zucchini, sliced

1 bell pepper (choose any color for vibrant appeal), sliced

1 medium red onion, cut into wedges

1 cup cherry tomatoes, halved

2 tablespoons high-quality olive oil

1 teaspoon dried Italian herb blend (oregano, basil, thyme)

Sea salt and freshly ground black pepper, to taste

1/4 cup crumbled feta cheese (optional for a tangy twist)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package directions until al dente. Once cooked, drain the pasta and allow it to cool completely in a colander, rinsing with cold water if desired.

    Prepare the Vegetables: While the pasta cooks, preheat your grill or grill pan to medium heat. In a mixing bowl, combine the sliced zucchini, bell pepper, red onion wedges, and halved cherry tomatoes. Drizzle with olive oil, then sprinkle with the dried Italian herbs, sea salt, and freshly ground pepper. Toss until all the vegetables are evenly coated.

      Grill the Vegetables: When the grill is ready, carefully place the seasoned vegetables onto it. Grill each side for about 4-5 minutes, or until you achieve a lovely char and the vegetables are tender yet still crisp. Remove from the grill and chop the grilled vegetables into bite-sized pieces for easy mixing.

        Combine Ingredients: In a large mixing bowl, introduce the cooled pasta to the grilled vegetable medley. Gently toss the ingredients together until they are evenly distributed and well combined.
