Ingredients

1 pound baby carrots (or if using regular carrots, peel and cut into uniform sticks)

3 tablespoons honey

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and freshly ground pepper to taste

1 tablespoon balsamic vinegar (optional for an added depth of flavor)

Fresh parsley, chopped, for garnishing

Instructions

Begin by preheating your oven to 425°F (220°C) to prepare for roasting.

In a large mixing bowl, whisk together the honey, olive oil, minced garlic, thyme, salt, and pepper. If you desire a hint of tang, mix in the balsamic vinegar. This blend will create a delightful glaze for the carrots.

Next, add the baby carrots to the bowl, ensuring they are evenly coated by tossing well with the honey garlic mixture until they all shine.

Line a baking sheet with parchment paper to prevent the carrots from sticking. Spread the coated carrots in a single layer on the sheet, ensuring they are not overcrowded for optimal roasting.

Roast the carrots in your preheated oven for 25-30 minutes, turning them halfway through the cooking time. This will help them cook evenly and develop a lovely brown caramelization. The carrots are done when they are tender and slightly caramelized.

Once removed from the oven, taste and adjust seasoning with additional salt and pepper if necessary. Finish by sprinkling chopped fresh parsley over the roasted carrots for a burst of color and freshness.

              - Presentation Tips: Serve the roasted carrots on a beautiful platter or individual plates, drizzled with any remaining glaze from the baking sheet, and garnish with extra parsley to make them visually appealing. Enjoy this side dish warm!
