4 salmon fillets (approximately 6 oz each)

3 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 teaspoon dried Italian herb blend (including oregano, basil, and thyme)

1/2 teaspoon red pepper flakes (adjust to taste for heat level)

Sea salt and freshly ground black pepper, to taste

Zest and juice of 1 fresh lemon

Fresh basil leaves for garnish

Begin by preheating your oven to 400°F (200°C) to ensure it's ready for the salmon.

    In a large oven-safe skillet, pour in 2 tablespoons of extra virgin olive oil and warm it over medium heat. Once hot, add the minced garlic, sautéing it for about 1 minute until it becomes fragrant—be careful not to let it burn.

      Introduce the halved cherry tomatoes to the skillet and continue to sauté for an additional 3-4 minutes, allowing them to soften and release their delicious juices.

        Next, stir in the roughly chopped spinach along with the dried Italian herbs, red pepper flakes, sea salt, and pepper. Cook the mixture for about 2 minutes or until the spinach wilts and shrinks down.

          Create some space in the skillet by pushing the cooked vegetables to one side. Add the remaining tablespoon of olive oil to the cleared section, and gently place the salmon fillets in the skillet, skin-side down. Season each fillet with a sprinkle of salt, pepper, and the fresh lemon zest.

            Squeeze the lemon juice evenly over both the salmon and vegetables for a fresh, zesty flavor boost.

              Carefully transfer the skillet to your preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
