1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 cup mixed bell peppers (red, yellow, green), sliced into thin strips

1 cup snap peas, trimmed

1 small onion, thinly sliced

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

Zest and juice of 1 orange

Zest and juice of 1 lime

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon sesame oil

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Begin by heating the olive oil in a large skillet or wok over medium-high heat until shimmering.

    Add the sliced onion, bell peppers, and snap peas to the skillet. Stir-fry the vegetables for approximately 3-4 minutes, or until they begin to soften and become vibrant in color.

      Incorporate the minced garlic and grated ginger into the skillet, stirring swiftly to prevent burning. Sauté for about 30 seconds until fragrant.

        Carefully add the peeled and deveined shrimp to the pan, cooking for 2-3 minutes, or until they turn pink and opaque, stirring occasionally for even cooking.

          While the shrimp are cooking, prepare the citrus sauce by whisking together the orange zest, orange juice, lime zest, lime juice, soy sauce, honey, and sesame oil in a small bowl until well combined.

            Pour the citrus sauce over the cooked shrimp and vegetables in the skillet. Toss everything together thoroughly to ensure it is evenly coated with the sauce. Continue to cook for an additional minute to heat through and meld the flavors.

              Taste the mixture and season with salt and pepper as desired. Remove the skillet from the heat.

                To serve, spoon the stir fry onto plates while it’s still hot, and generously garnish with sliced green onions and a sprinkle of sesame seeds for a lovely crunch.
